Edam is a semi-hard to hard Dutch cheese that is made from pasteurized cow's milk.
Just like Gouda cheese, Edam cheese has also received a protected geographical indication: “Edam Holland”.
Edam is available in a naturally-ripened variety and as a foil-ripened cheese.
The cheese has a soft flavour.
